GOLDEN BERRIES

(A.K.A.- PHYSALIS, PERUVIAN GROUND CHERRIES, CAPE GOOSEBERRIES)

GOLDEN BERRIES

Dried Physalis have recently been marketed as the new superfood called Golden Berries.These delicious little berries are related to the tomatillo. They are yellow in color with tan husks on the outside. Golden Berries contain tiny edible seeds packed with nutrients and they are the new superfood.

ANOTHER SUPERFOOD

Some of the Golden Berry’s nutrient dense traits include: Beta Carotene, Vitamin A, Vitamin C, Thiamin, Niacin, Linoleic Acid, Oleic Acid, Digestive Enzymes, Antioxidants, Anti-Inflammatory properties and a Natural Diuretic

The flavor is similar to Tomatillos with a tropical perfume and a tangy finish. We love using dried Golden berries in salads and desserts and we have created some savory recipes that are perfect for your summer entertaining.

THIS IS WHAT OUR CLIENT'S ARE EATING THIS SUMMER

Here is a recipe for our Golden Berry Salsa Amarillo. It’s the perfect accompaniment for grilled fish, chicken, carne asada tacos, or just by itself with chips and a Margarita. We have been serving this to our discerning clients recently.

GOLDEN BERRIES SALSA AMARILLO

Yield: 1 QT

Ingredients:

1 qt Golden berries (no husks)

1 lg Onion loosely chopped

8 cloves of Garlic peeled

5 Yellow Lipstick peppers

1 medium Poblano pepper

2 medium Jalapeno peppers

1 cup EVO

1 T ground Cumin

2 T whole Coriander seed

1 tsp ground Annatto seed

1 T dried Oregano

1 tsp Paprika

2 T Kosher Salt

Juice & Zest of 3 limes

2 C fresh Cilantro

Method:

1.) Place Golden Berries, Onion, garlic, Yellow Peppers, Poblano, Jalapenos, ½ C EVO, all Dried Spices toss and spread on a sheetpan

2.) Roast in preheated 400 degree oven with convection fan for 30 mins (10 mins longer if it is a still oven)

3.)  Lightly stir tray and rotate once during roasting to get even color

4.) Remove from oven and cool tray completely

5.) Place all ingredients in Vita Mix, add lime juice, cilantro and remaining EVO

6.) Blend until smooth, add additional salt and pepper to taste
